Vegan Cheese
Ingredients:
[ ] 60 grams drained cashews blended with 1½ cups water
[ ] 60 ml hot water
[ ] 4 teaspoons agar agar powder
[ ] 2 tablespoons nutritional yeast
[ ] 1¼ teaspoon salt
[ ] ½ teaspoon fresh lemon juice
[ ] ¼ teaspoon Italian herbs
[ ] slurry made from 7 teaspoons tapioca starch and ¼ cup cold water
Method:
[ ] Pour boiling water over the cashews and soak for 15 minutes, then drain
[ ] Blend the cashews with 1½ cups water until completely smooth
[ ] Pour the mixture into a saucepan and add all remaining ingredients, except the slurry. Stir well
[ ] Cook over medium heat, stirring frequently until it boils
[ ] Turn down the heat to lowest setting so that the cheese sauce is just barely boiling and stir constantly for 5 minutes until it is very smooth
[ ] Add the slurry to the boiling cheese sauce, stirring quickly and constantly, and then cook for an additional minute. Your cheese will become very thick and stretchy
[ ] Immediately pour into glass jar lined with baking paper
[ ] Let it cool for about 15 minutes at room temperature, then transfer to the refrigerator for at least 3 hours to set firmly
[ ] This cheese truly shines when melted over gluten-free bread or pizza
