Sour Gummies
Ingredients:
[ ] 200 g seedless black tamarind (Osman's Taj Mahal Black Tamarind bought at Pick n Pay)
[ ] 2 tablespoons honey
[ ] 1 tablespoon butter
[ ] 1 teaspoon vanilla extract
[ ] ½ teaspoon ground cinnamon
[ ] ⅛ teaspoon salt
[ ] 2 tablespoons arrowroot powder
Method:
[ ] Add the tamarind, honey and butter to a small saucepan
[ ] Heat gently over low heat, stirring occasionally, until the butter has melted and the mixture is soft and well combined
[ ] Stir in the vanilla extract, cinnamon and salt
[ ] Add the arrowroot powder and stir continuously until fully incorporated
[ ] Continue cooking over low heat for about 3 minutes, stirring constantly, until the mixture thickens into a very stiff paste. Using two wooden spoons makes it easier to work with
[ ] Transfer the mixture onto a sheet of baking paper and spread it to approximately 1 cm thick using the wooden spoons
[ ] Leave to cool completely at room temperature
[ ] Refrigerate overnight until firm
[ ] Cut into squares and wrap each toffee individually in baking paper for storage. Makes 20–24 toffees
