Pickled Onions

Ingredients:
[ ] 500 grams small cocktail onions / pickling onions, peeled
[ ] 1 cup apple cider vinegar
[ ] 1 cup water
[ ] 2 tablespoons raw honey
[ ] 1 teaspoon sea salt
[ ] ½ teaspoon mustard seeds
[ ] ½ teaspoon coriander seeds
[ ] 1 small bay leaf
[ ] 3 black peppercorns

Method:
[ ] Place the peeled onions in a clean glass jar
[ ] Add the vinegar, water, honey, salt and spices to a small saucepan
[ ] Warm gently until the honey and salt dissolve. Do not boil heavily
[ ] Pour the warm brine over the onions until fully covered
[ ] close the jar and allow to cool, refrigerate
[ ] Leave for at least 3 days before eating. The flavour improves after 1–2 weeks
[ ] Keep refrigerated and use within about 4–6 weeks
