Lemon Soufflé Roll

Ingredients:
[ ] 225 ml egg whites
[ ] ½ teaspoon cream of tartar
[ ] 1 teaspoon vanilla extract
[ ] ⅛ teaspoon salt
[ ] 1 tablespoon honey

Filling Ingredients:
[ ] 150 grams plain goat yoghurt
[ ] 30 grams goat cream cheese
[ ] 1 tablespoon honey
[ ] 1 teaspoon lemon zest
[ ] 2 teaspoons fresh lemon juice
[ ] ⅛ teaspoon salt

Method:
[ ] Preheat oven to 180 °C
[ ] Line a baking tray with baking paper
[ ] Place the egg whites into a clean bowl and beat on high speed for 1 minute until foamy
[ ] Add the cream of tartar and salt while the mixer is still beating on high speed. Continue beating for 1 minute until stiff peaks form
[ ] Gently fold the vanilla extract and honey through until just combined
[ ] Spread the mixture evenly onto the prepared tray
[ ] Bake for 8 minutes until lightly golden brown
[ ] Turn the oven off and leave the roll inside with the oven door open for 1 minute to help prevent deflating
[ ] Allow to cool and prepare the filling. Mix all the filling ingredients until smooth and creamy
[ ] Spread the filling evenly over the cooled roll and carefully roll close
