Fornoroni
Ingredients:
[ ] 500 g pork or chicken mince
[ ] 2 teaspoons smoked paprika
[ ] 1 teaspoon garlic powder
[ ] 1 teaspoon onion powder
[ ] 1 teaspoon fennel seeds, lightly crushed
[ ] ½ teaspoon mustard powder
[ ] 1 teaspoon dried oregano
[ ] ½ teaspoon ground black pepper
[ ] ¼ teaspoon cayenne pepper
[ ] 1 teaspoon salt
[ ] 1 tablespoon honey
[ ] 1 tablespoon apple cider vinegar
Method:
[ ] Combine all the ingredients in a large bowl and mix thoroughly until well combined
[ ] Cover and refrigerate overnight to allow the flavours to develop
[ ] Shape the mixture into one or two logs. Wrap each log tightly in baking paper and tie securely with kitchen string to hold its shape
[ ] Place the log(s) seam-side down in a baking tray
[ ] Bake at 150°C until the internal temperature reaches 74°C (approximately 40 minutes, depending on the thickness of the log)
[ ] Remove from the oven and allow to rest for 15 minutes. Unwrap the baking paper and let the pepperoni cool completely
[ ] Refrigerate until thoroughly chilled, then slice as thinly as possible. Enjoy on pizzas, in sandwiches, or as part of a snack platter
