Burger Relish
Ingredients:
[ ] 150 grams peeled red onions, finely chopped (about 2 red onions)
[ ] 12 grams black garlic paste
[ ] 600 grams tomatoes, chopped (about 3 large tomatoes)
[ ] 60 grams butter
[ ] 50 grams tomato paste
[ ] 1 tablespoon paprika
[ ] ½ teaspoon salt
[ ] ⅛ teaspoon fine black pepper
[ ] 1 tablespoon water
[ ] 60 ml red balsamic vinegar
[ ] 2 tablespoons fresh lemon juice
[ ] 85 grams honey
[ ] 100 grams gherkins (refer to recipe), finely diced
[ ] slurry made with 2 teaspoons tapioca flour and 1½ tablespoons cold water
Method:
[ ] Melt the butter in a large pot over medium heat
[ ] Add the onion and sauté until soft and translucent
[ ] Add the chopped tomatoes and simmer for approximately 10 minutes, until they begin breaking down
[ ] Reduce to the lowest heat and stir in the tomato paste, black garlic paste, paprika, salt, pepper and water. Cook gently for 5 minutes, stirring regularly
[ ] Add the honey, vinegar and lemon juice. Simmer uncovered for approximately 10 minutes, stirring occasionally, until reduced and jammy
[ ] Mix the tapioca flour with 1½ tablespoons cold water until completely smooth.
Slowly pour the slurry into the simmering sauce while stirring continuously. Cook gently for approximately 2 minutes, just until the sauce is glossy and sufficiently thick. Do not cook it excessively after adding the tapioca, as it may become stretchy
[ ] Remove from the heat and fold in the finely diced gherkins
[ ] Transfer to a clean, airtight jar and refrigerate
