Beetroot Salad
Ingredients:
[ ] 200 grams baby beetroot
[ ] 100 grams goat yogurt
[ ] 2 teaspoons avocado-oil
[ ] ½ teaspoon fresh lemon juice
[ ] ¼ teaspoon salt
[ ] ⅛ teaspoon black pepper
[ ] 4 g fresh dill
[ ] 3 g black garlic
Method:
[ ] Trim the ends of the baby beetroot, then remove the skins
[ ] Steam the beetroot whole in a steamer for 60 minutes
[ ] Let the roasted beetroot cool down
[ ] Mix the goat yogurt with black garlic, lemon juice, salt & pepper
[ ] Fold in the beetroot gently (or serve layered for presentation)
[ ] Drizzle oil and sprinkle dill on top
