Apple Chutney
Ingredients:
[ ] 700 grams apples, cored and cut into cubes (about 6 medium apples)
[ ] 120 ml water
[ ] 2 spring onions, sliced
[ ] 4 black garlic cloves, finely chopped
[ ] ½ cup honey
[ ] 3 tablespoons apple cider vinegar
[ ] ½ teaspoon salt
[ ] 1 teaspoon ground coriander
[ ] ½ teaspoon ground cinnamon
[ ] ⅛ teaspoon ground cloves
Method:
[ ] Add all the ingredients to a saucepan, stir well and bring to a gentle simmer
[ ] Cover and cook over low heat for 30 minutes, stirring every 10 minutes
[ ] Remove the lid and continue cooking uncovered over low heat for 20 minutes, stirring every 10 minutes
[ ] Remove from the heat, allow to cool for 10 minutes, then blend lightly with a stick blender, leaving some texture
[ ] Return to low heat, cover and cook for a further 12 minutes, stirring halfway through, until thick and glossy
[ ] Remove from the heat and allow to cool completely
[ ] Store in the fridge for up to 2 weeks
